Are you ready to celebrate Karl Oskar Days? Some years ago, one of our nephews came to the celebration and asked who “Oscar Carlson” was. We straightened that out, but that nephew is now 42 years old and still calls it Oscar Carlson Days! It’s good for a laugh anyway. If you are able, take in the many activities that are happening in these four days of celebration. If you have friends or relatives visiting, take a break from spending a lot of time in the kitchen preparing a little something to snack on. The following dips have just four ingredients. They are easy to make, saving a lot of preparation time.
FRESH FRUIT DIP 1 c. sour cream 1 T. brown sugar Granulated sugar to taste (Optional) Assorted fresh fruits, cut in bite size pieces
In a medium bowl, combine sour cream and brown sugar, mixing well. Add sugar for desired sweetness. Chill at least one hour. Serve with assorted fruit of your choice.
ZIPPY CHEESE DIP 1 lb. lean ground beef 1 lb. Velveeta cheese, cubed 1-8 oz. jar picante sauce 1/8 t. hot sauce
In a frying pan, brown ground beef, drain well. In a saucepan, melt cheese over low heat, stirring constantly. Add picante sauce and hot sauce. Combine ground beef and hot sauce, heat through. Serve with tortilla or corn chips. Makes four cups. Note: You can melt cheese in micro on 50 percent power for about two minutes, stirring. After one minute, if not melted, cook a bit longer. Stir in picante sauce.
ALMOND DELIGHT DIP 2-6 oz. containers vanilla low-fat yogurt 1/8 t. almond extract 2 T. chopped almonds (using slivered almonds) Apple slices
Combine yogurt and almond extract. Chill at least one hour. When ready to serve, sprinkle with chopped almonds. Serve with apple slices. (To prevent apple slices from darkening, toss with a little lemon or orange juice) Makes about 1-1/2 c. dip.
VEGGIE DIPPIN’ DIP 1-8 oz. pkg. cream cheese, softened 2 T. milk 1 T. prepared horseradish 1/3 c. chopped fresh parsley
Combine all ingredients and beat until smooth. Serve with raw veggies. Makes one cup.
CREAMY PIMIENTO SPREAD 2 c. low-fat cottage cheese 3/4 t. onion powder Dash garlic powder 1-3 oz. jar pimientos, drained
Combine all ingredients in blender; blend until smooth. Serve as a spread or stuff celery ribs. Can also use other veggies to dip. Makes two cups.
APPLE CURRY DIP 1-1/2 c. low-fat cottage cheese 2 c. unsweetened apple sauce 1 envelope onion soup mix 2 t. curry powder
In blender, blend cottage cheese and apple sauce until smooth. Pour into bowl. Stir in rest of ingredients. Refrigerate until serving time. Serve with raw veggies. Makes about two cups.
